You’ll feel both a sense of tranquility and overstimulation the minute you walk through the property’s entrance. Vast reflective pools surround the property’s sugar-white buildings, all with unobstructed views of Baja’s Sea of Cortés, and the dramatic ovoid structure in the middle of the property anchors the center of the watery retreat. While the entire resort feels like a modern dreamscape, what really makes Viceroy Los Cabos special is their lavish offering of villas and rooms. Every room has a terrace with a water view and sun-soaked balcony, allowing you to roll right out of bed and bask on your own private perch.

The Viceroy offers several dining options on property which will tantalize your tastebuds. There’s Cieolmar, the hotel’s rooftop restaurant providing a beautiful ocean view, with extraordinary contemporary cuisine. The second restaurant is Nido, labeled as a robatayaki, which offers fresh and innovative sushi/sashimi dishes served beneath a woven structure evocative of a bird’s nest flipped by the wind (“nido” in Spanish means “nest”). Surrounded by water, the setting was transportive and the dishes were delectable. Casero offers an incredible breakfast – everything from an extensive breakfast and lunch menu to traditional Mexican dishes, with breathtaking indoor/outdoor water views. Lastly, Nidito is the beach and poolside bar with special mobile food carts and tasty snack-able delights. A farm-to-table movement has blossomed in this region of the world, led by the acclaimed Flora Farms, and followed up by the note-worthy Acre and Los Tamarindos and restaurants. Another standout was Lumbre, opened up by the former Viceroy executive chef, bringing noteworthy fusion dishes to this incredible San Jose restaurant.

Los Cabos – a catchall name for the towns of Cabo San Lucas and San José del Cabo – has had a reputation as an Americanized resort getaway. That said, Los Cabos’ reinvention began back in 2015 after Hurricane Odile ripped through the region and destroyed many of these mega-properties. Since then, new hotels have been (re)built, setting themselves apart with striking architecture and upscale amenities, including the beautiful Viceroy which opened up in 2018 and has been the must-visit hotel in the region known as Zona Hotelera near the intimate town of San José del Cabo since its debut. While the region offers so much – boating, fishing, surfing, beach hopping, restaurants — it was difficult to escape Viceroy Los Cabos and leave the property for any extended period. PCR and rapid Covid-19 testing is available on property for a nominal fee in order to test for a return to the United States from Mexico.
